HOW WE MAKE IT
[yellow tail] Merlot is made with grapes sourced from the highest quality vineyards. Once the grapes are crushed and stems removed, they are fermented on skins in contact with oak. Temperature controlled fermentation ensures maximum varietal flavour, colour and tannin extraction. The wine is bottled at the Casella Family Winery in Yenda, New South Wales.
[yellow tail] Merlot has soft aromas of ripe plums, mulberries, lingering vanilla and the sweet spiciness of Christmas cake.
Fresh and juicy flavours of sweet plums and raspberries complement the chocolate and spice aroma, with hints of aniseed that comes from the careful integration of American oak. It finishes soft, rich and simply delicious.
