Legend tells that the last Cathars would have hidden a priceless treasure in the vicinity of the City of Carcassonne before disappearing ... Myth or reality, years of excavations have not found out. With this cuvée, powerful and elegant, Les Vignobles Foncalieu invokes the cathar ages and sublimates their original terroir.
Varieties 100% Cabernet Sauvignon
Soils The terroir of the Cité de Carcassonne PGI lies in the west of the Languedoc, in the Aude area, mainly on hillsides forming a circle with a radius of some 20km around the City of Carcassonne. The vines of “Trésor Cathare” are situated near the village of Conques (France), where the limestone vein that runs through the land mixes with the clay soil. The vineyard benefits from two different climate influences: the hot, dry Mediterranean climate, softened by the more temperate Oceanic climate from the Atlantic . These harmonious conditions produce an elegant, well-balanced wine brimming over with fruit.
Vine-growing Controlled natural grass cover to structure the soils and limit yields naturally.
Winemaking Harvest destemmed and crushed. Macerated in cold conditions for 5-6 days before fermenting to extract intense fruit character. Alcoholic fermentation and maceration for 3 weeks. Malolactic fermentation.
Ageing Its strength is softened by a subtle ageing in wood.
Powerful bouquet of black fruits, cocoa and peppers, enhanced with floral and animal notes. Complex and rich in the mouth, supported by a remarkable structure and persistent aromas.
The perfect accompaniment to regional favorites such as cassoulet (pork casserole) or gardianne de taureau (beef stew).
