Viticulture and Vinification
Red varieties are harvested very early to create a base wine with light colour, fresh acid and low alcohol. The primary fermentation is carried out at 11ºC proceeds quickly because the base wine has only around 10% alcohol. This wine is lightly clarified of yeast and held cold until the second fermentation. The wine is then held under pressure until bottling so that bubbles remain.
Intense pink, strawberry-like colour. Fine, elegant pearling of medium persistence. Olfactory it starts beautifully with aromas of red berries (raspberries and strawberries), cherries, with rose petals in the background. Comforting, with a very good acidity, citrus and gently finish aspects.
