Our [yellow tail] Cabernet Merlot uses the perfect blend of Cabernet Sauvignon and Merlot grapes creating a wine that is an irresistible deep red colour with vibrant purple hues.

HOW WE MAKE IT
Once they arrive at the winery, each grape takes a special journey
to create a unique and flavoursome set of wine varietals. Once the grapes are crushed and stems removed, they are fermented on skins in contact with oak. Temperature controlled fermentation ensures [yellow tail] Cabernet Merlot reaches its maximum varietal flavour, colour and tannin extraction. The wine is bottled at the Casella Family Winery in Yenda, New South Wales.
Filling the nose are aromas of ripe blackcurrant fruit, pepper and red berries with hints of cedar, true to Cabernet Merlot.
With a lasting juicy finish and a velvety texture, flavours of deep red berry and hints of cinnamon and cloves entice the palate.
